Watermelon Cucumber Popsicles

In need of a nutrient-dense summer treat? Homemade popsicles are refreshing and so easy to make!

We chose ingredients that are hydrating and great for decreasing belly bloat - think watermelon, cucumber, and yogurt. 

Cucumber, which is 95% water, is an excellent source of the anti-inflammatory polyphenol quercetin. (1) The L-Citrulline found in watermelon can improve heart health and exercise performance. (2) Together, they create a crave-worthy flavor profile you might find at a gourmet popsicle truck. 

Add a dose of healthy fats and protein with the addition of coconut milk, plus sweetness from strawberries and honey. 

These make for an energizing, rehydrating snack on active summer days. Enjoy one after a run or bike ride, or after a grilled supper as a light dessert. 

Alternate ingredients listed for vegan popsicles.

Flat-Tummy Watermelon-Cucumber Popsicles 

Ingredients: (Click here to print!)

  • 1 lb. fresh seedless watermelon chunks

  • 1 cup sliced strawberries

  • 1 cup peeled, seeded cucumber chunks 

  • 2 tablespoons honey (or maple syrup) 

  • 2 tablespoons lime juice

  • 1 cup canned coconut milk

Directions

Pulse all ingredients together in a blender to form a smooth puree. Pour into popsicle molds and freeze until solid. 

Popsicles will keep in an airtight container for up to six weeks. 

Makes 8-16 popsicles, depending on the size of your mold.
