Cashew Collagen Queso
Serves: 2-4 people
Ingredients:
1 cup raw, unsalted cashews
¼ cup water
¼ cup veggie or chicken stock
1 scoop Paleovalley Bone Broth Protein
1 teaspoon taco seasoning
4-ounce can organic diced green chiles (the chiles AND the juice in the can)
Directions:
Step 1: Combine all ingredients in a high-speed blender, then blend on high for 90 seconds, or until smooth and creamy (you may have to scoop the mixture down the sides at some point. If you find it too thick, add 1 tbsp of water until a dip consistency is reached).
Step 2: Serve hot (warm on stove) or at room temperature with plantain chips. Enjoy!
